Yields: Approximately 8-10 rolls Prep time: 20 minutes Cook time: 10-15 minutes

Ingredients:

For the Cinnamon Rolls:

  • 1 cup + 2 tablespoons almond flour, superfine blanched
  • 1 ½ ounces cream cheese, softened
  • 2 ¼ cups shredded mozzarella cheese (low-moisture, part-skim recommended)
  • 1 large egg
  • 1 tablespoon unsalted butter, melted (for spreading on dough)
  • ½ tablespoon ground cinnamon (for filling)
  • 3 tablespoons keto-friendly sweetener (e.g., granular Swerve, erythritol blend, for filling)

For the Icing:

  • 1 tablespoon unsweetened almond milk
  • ¼ cup confectioners sweetener (e.g., Swerve Confectioners, erythritol-based powdered sweetener)

Equipment:

  • Large microwave-safe bowl
  • Spatula or sturdy spoon
  • Rolling pin
  • 2 sheets of parchment paper
  • Cookie sheet
  • Pastry brush (optional, for butter)
  • Small bowl (for icing)
  • Whisk or fork

Instructions on how to prepare Keto Cinnamon Rolls:

  1. Preheat Oven & Prepare Dough Base: Preheat your oven to 350°F (175°C).

    • In a large microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Place in the microwave for 60 seconds.

    • Remove the mixture from the microwave. Stir vigorously with a sturdy spoon or spatula. The mixture may become very thick and difficult to stir. If so, place the bowl back in the microwave for another 30 seconds.
    • Remove from the microwave and stir until the cheeses are well combined and somewhat smooth.
    • Add the almond flour to the melted cheese mixture. Stir well.
    • Add in the egg and continue to stir (or knead by hand) until the mixture forms a cohesive dough or “crust” that pulls away from the sides of the bowl.
  2. Roll Out Dough: Place a sheet of parchment paper on a flat working surface.
    • Spoon the dough onto the center of the parchment paper.
    • Place another sheet of parchment paper over the dough to help roll it out without sticking. Using a rolling pin over the top sheet of parchment paper, roll out the dough until it’s about ¼ inch thick. The length of your dough should be approximately 12 inches (you can make it longer for more layers, adjusting width accordingly).
  3. Add Filling: Remove the top sheet of parchment paper.
    • Spread the melted butter evenly over the rolled-out dough using a cooking brush or the back of a spoon.
    • In a small bowl, mix the ½ tablespoon cinnamon and 3 tablespoons keto-friendly sweetener for the filling. Sprinkle this mixture evenly over the buttered dough.
  4. Form Rolls: Starting from one long end, carefully but tightly roll the dough into a log. Once rolled, gently pinch the seam to seal it.
    • Using a sharp knife or unflavored dental floss, carefully slice the log into approximately 8-10 equal-sized rolls (about 1 to 1 ½ inches thick).
  5. Bake: Arrange the cut cinnamon rolls on a cookie sheet lined with parchment paper, leaving a little space between them.
    • Bake for 10 to 15 minutes, or until the rolls are golden brown on top and the edges are set.
    • Remove the rolls from the oven and allow them to cool completely on the cookie sheet before icing. Cooling is important to prevent the icing from melting off.
  6. Make & Apply Icing: In a small bowl, mix the 1 tablespoon unsweetened almond milk and ¼ cup confectioners sweetener until a smooth, pourable icing forms. If you want more icing, double the servings.
    • Once the rolls are completely cooled, drizzle or spread the icing generously over the top of each roll.

Enjoy! Serve these delicious keto cinnamon rolls warm (you can briefly warm them in the microwave after icing, if desired) or at room temperature.

Tips for Success:

  • Hot Mozzarella: Getting the mozzarella and cream cheese hot enough in the microwave is crucial for a pliable, easy-to-work-with dough.
  • Kneading/Mixing: Don’t be afraid to use your hands to mix the dough once the almond flour and egg are added; it helps create a cohesive ball.
  • Parchment Paper: Using two sheets of parchment paper makes rolling out the sticky dough much easier and prevents it from sticking to your rolling pin.

  • Even Thickness: Try to roll the dough to an even ¼-inch thickness for consistent baking.
  • Tight Roll: Rolling the dough tightly will create more layers in your cinnamon rolls.
  • Cool Completely: This is important for the icing! If the rolls are warm, the icing will melt and absorb rather than sitting on top.
  • Sweetener for Filling: Using a granular sweetener works fine for the filling, as the butter helps it adhere.
  • Confectioners Sweetener for Icing: For the icing, confectioners/powdered sweetener is essential for a smooth, glaze-like consistency.
  • Storage: Store leftover cinnamon rolls in an airtight container at room temperature for a day, or in the refrigerator for up to 3-4 days. They can be gently reheated in the microwave for a soft, warm treat.
