  • 2 garlic cloves, minced (or ½ teaspoon garlic powder)

  • 1 teaspoon Worcestershire sauce (check for low-sugar/keto-friendly versions, or omit if strict)
  • 2 ounces cream cheese, softened
  • 2 large eggs
  • 1-2 tablespoons mustard (Dijon or yellow, ensure sugar-free)
  • ½ cup heavy whipping cream (HWC)
  • 1 cup shredded cheddar cheese, divided

  • 1 cup shredded white cheddar cheese, divided
  • 1 teaspoon burger seasoning (check for no added sugar)
  • Salt and black pepper to taste
  • 3 slices cooked and crumbled bacon, plus more if desired for topping
  • 1 kosher pickle, cut into small pieces (or dill pickles, ensure no added sugar)

Equipment:

  • Large skillet
  • 8×8 inch or 9×9 inch baking dish (or 8×11 inch as suggested)
  • Medium bowl
  • Whisk
  • Spatula
  • Cooking spray or oil

Instructions on how to prepare Keto Bacon Cheeseburger Casserole:

  1. Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C).
    • Lightly spray an 8×8 inch, 9×9 inch, or 8×11 inch baking dish with oil or cooking spray.
  2. Cook Ground Beef Mixture: Place the ground beef in a large skillet over medium-high heat.
    • Add the minced garlic, chopped onion, burger seasoning, and salt and black pepper to taste.
    • Using a spatula, break the ground beef into small chunks as it cooks.
    • Cook until the ground beef is no longer pink and is fully cooked through. Drain any excess grease from the skillet.
    • Reduce heat to low. Add the Worcestershire sauce and the softened cream cheese to the cooked ground beef. Stir continuously until the cream cheese has melted and is well combined with the beef mixture.
    • Remove the skillet from heat.
  3. Prepare Liquid Mixture: In a medium bowl, whisk together the eggs, ½ cup shredded cheddar cheese, ½ cup shredded white cheddar cheese, heavy cream, and mustard until well combined.
  4. Assemble Casserole: Pour the cooked ground beef mixture into the prepared baking dish, spreading it evenly across the bottom.
    • Evenly sprinkle the crumbled bacon and the cut pickle pieces throughout the ground beef mixture.
    • Drizzle the prepared liquid (egg, cheese, cream, mustard) mixture evenly over the top of the ground beef and bacon/pickle layer.
    • Sprinkle the remaining ½ cup shredded cheddar cheese and ½ cup shredded white cheddar cheese evenly on top of the casserole.
  5. Bake: Bake in the preheated oven for 15 to 20 minutes, or until the cheese is melted and bubbly, and the casserole is set (the center should not be jiggly). Mine was ready in about 20 minutes.
  6. Cool & Serve: Remove the casserole from the oven. Allow it to cool for a few minutes before serving. This helps it set further and makes for cleaner slices. Enjoy!

Tips for Success:

  • Drain Grease: Draining excess grease from the ground beef is important to prevent a greasy casserole.
  • Cream Cheese Softness: Ensure the cream cheese is truly softened so it melts smoothly into the beef.
  • Worcestershire Sauce: Traditional Worcestershire sauce contains a small amount of sugar. For a very strict keto diet, check for keto-friendly brands or omit it.

  • Mustard Choice: Both yellow and Dijon mustard work well. Ensure no sugar is added.
  • Burger Seasoning: Check the ingredients of your burger seasoning to ensure no added sugars or starches.
  • Pickle Quality: Use dill pickles or kosher pickles with no added sugar. The acidity of the pickles provides a classic cheeseburger tang.
  • Customization: Feel free to add other keto-friendly burger toppings like sautéed mushrooms, a few slices of fresh jalapeños for heat, or a sprinkle of sesame seeds on top.
  • Cooling Time: Letting the casserole cool slightly before serving helps it set up, making it easier to portion neatly.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days. It reheats well in the microwave or oven.
