These blueberry cream cheese fat bombs are a delicious and easy-to-make treat, perfect as a delicious addition to your health journey. They come together quickly in a food processor and can be frozen for a convenient snack whenever you need one.

Ingredients

3/4 cup fresh or frozen blueberries
8 ounces cream cheese, softened
1 to 3 tablespoons Swerve Confectioners (or your preferred sweetener, to taste)
1 teaspoon vanilla extract
2 heaping tablespoons coconut oil, melted if solid
Instructions

Combine the blueberries, softened cream cheese, Swerve Confectioners (starting with 1 tablespoon and adding more to taste), and vanilla extract in a food processor.
Process until the mixture is smooth and well combined.
With the food processor running on low, slowly drizzle in the melted coconut oil until fully incorporated and the mixture is smooth and creamy. This helps to emulsify the mixture and prevent separation.
Scrape down the sides of the bowl as needed to ensure everything is incorporated.
Pour the mixture into ice cube trays or silicone molds.
Freeze for 1 to 2 hours, or until solid.
Once frozen, pop the fat bombs out of the molds and store them in an airtight container in the freezer.
