Yields: Approximately 20-24 chips Prep time: 15 minutes Cook time: 20 minutes

Ingredients:

For the Broccoli Cheddar Chips:

  • 1 large head of broccoli (about 1.5-2 lbs)

  • 1 cup shredded Parmesan cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons almond flour
  • 1 large egg
  • Pink Himalayan salt to taste
  • Everything bagel seasoning to taste
  • Parchment paper (for baking sheet)

For the Creamy Dill Dip:

  • 1 tablespoon dried dill weed
  • 1 teaspoon dried oregano
  • 3 tablespoons minced onion (fresh or dried, if fresh, mince very finely)
  • 1 cup avocado mayonnaise (or other keto-friendly mayonnaise)

  • 1 cup full-fat sour cream

Equipment:

  • Food processor
  • Large mixing bowl
  • 1-tablespoon measuring spoon (for scooping)
  • Large baking sheet(s)
  • Spatula or thin turner
  • Medium mixing bowl (for dill dip)

Instructions:

Part 1: Prepare the Broccoli Cheddar Chips

  1. Prepare Broccoli: Wash the large head of broccoli. Cut it into florets, discarding the tough stalk.
    • Place the broccoli florets in a food processor and pulse until finely chopped, resembling rice or small crumbs.
  2. Combine Chip Ingredients: In a large mixing bowl, combine the finely chopped broccoli, shredded Parmesan cheese, shredded cheddar cheese, almond flour, and the egg.
    • Add Pink Himalayan salt and Everything bagel seasoning generously to taste. Mix everything thoroughly with your hands until well combined and the mixture can hold its shape.
  3. Form & Bake Chips: Line a large baking sheet with parchment paper.
    • Using a 1-tablespoon measuring spoon, scoop portions of the mixture onto the prepared baking sheet.
    • Flatten each scoop into a thin, round chip shape, about ¼ inch thick. Leave a little space between each chip.
    • Place the baking sheet in the oven preheated to 400°F (200°C).
    • Bake for 10 minutes.
    • Remove the baking sheet from the oven, carefully flip each chip using a thin spatula, and return to the oven. Continue baking for another 10 minutes, or until the chips are crispy and golden brown.
  4. Cool Chips: Remove from the oven and let the chips cool on the baking sheet for a few minutes. They will crisp up further as they cool.

Part 2: Prepare the Creamy Dill Dip

  1. In a medium mixing bowl, combine the dried dill weed, dried oregano, minced onion (if using fresh, ensure it’s very finely minced), avocado mayonnaise, and sour cream.
  2. Mix all ingredients together well with a spoon or whisk until smooth and fully incorporated.
  3. Cover the bowl and refrigerate the dill dip for at least 30 minutes before serving to allow the flavors to meld and the dip to chill.

Serve & Enjoy! Serve the Crispy Keto Broccoli Cheddar Chips alongside the Creamy Dill Dip. Enjoy this healthy and flavorful snack! Store leftover chips in an airtight container at room temperature (they might soften slightly) or in the refrigerator. Store leftover dip in the refrigerator.

Tips for Success:

  • Broccoli Moisture: Ensure the broccoli is as dry as possible after chopping. If it seems wet, gently squeeze it in a clean kitchen towel. Excess moisture can make the chips soggy.
  • Flattening Chips: Flattening the chips thinly helps them get crispy. Don’t make them too thick.
  • Don’t Overcrowd: Give the chips space on the baking sheet to allow for even crisping. Bake in batches if necessary.
  • Dill Dip Flavor: The minced onion will soften and release more flavor as the dip chills. For more intense onion flavor, you can use dried minced onion.
  • Customization: For the chips, try adding a pinch of cayenne pepper for heat or garlic powder for extra flavor. For the dip, a squeeze of lemon juice can add brightness.
  • Serving: These chips are best enjoyed fresh, but can be reheated in a toaster oven or air fryer to re-crisp them.
