- ½ small white onion, finely diced
- 1 teaspoon fresh or dried parsley, chopped
- 2 cups chicken broth (low-sodium recommended)
- ¼ teaspoon nutmeg
- ½ teaspoon salt, or to taste
- ½ teaspoon black pepper, or to taste
- ¼ teaspoon xanthan gum (for thickening)
- 2 cups shredded cheddar cheese, divided (sharp or medium cheddar recommended)
- 1 teaspoon cream cheese, softened
- 1 ¼ cups heavy whipping cream
