Yields: 8 enchiladas (2-4 servings) Prep time: 20 minutes Cook time: 25-30 minutes

Ingredients:

  • 2 pounds chicken breast or thigh, cut into ½-inch to 1-inch cubes
  • 1-2 tablespoons olive oil
  • 1 cup onion, diced
  • 1 (4-ounce) can diced green chilis, drained
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • 1 (10-15 ounce) jar keto-friendly enchilada sauce (KETO NOTE: Choose a brand with no added sugar/starch, e.g., Frontera, Siete, or make your own)
  • 8 Mission Carb Balance tortillas (or your preferred low-carb tortillas)
  • 2 cups shredded cheese (e.g., Mexican blend, cheddar, or Monterey Jack), divided
  • Non-stick cooking spray (for baking pan)

Equipment:

  • Large skillet
  • Spatula or wooden spoon
  • 9×13 inch baking pan

Instructions:

  1. Preheat Oven & Prep Filling: Preheat your oven to 350°F (175°C).
    • In a large skillet over medium-high heat, heat the olive oil. Add the diced onion and cook for 3-4 minutes until the onion starts to soften and become translucent.
    • Add the cubed chicken pieces, cumin, and chili powder to the skillet. Cook, stirring frequently, until the chicken pieces are white on the outside (they won’t be cooked all the way through at this point, but will finish cooking in the oven).
    • Stir in the drained green chilis and cook for another minute. Remove the skillet from the heat.
  2. Prepare Enchiladas: Lightly spray a 9×13 inch baking pan with non-stick cooking spray. Pour a thin layer (about ½ cup) of the enchilada sauce over the bottom of the pan to prevent sticking and add flavor.
    • For each tortilla: Lay a low-carb tortilla flat. Spread a thin layer of enchilada sauce on one side of the tortilla.
    • Spoon a portion of the chicken and green chili mixture down the center of the tortilla, followed by a sprinkle of shredded cheese (using about 1 cup of the total cheese for the inside of the enchiladas).
    • Carefully roll up the tortilla and place it seam-side down in the prepared baking pan. Repeat with the remaining tortillas and filling until the pan is full.
  3. Sauce & Top: Pour the remaining enchilada sauce evenly over the top of the rolled enchiladas in the pan, ensuring they are well covered.
    • Sprinkle the remaining 1 cup of shredded cheese generously over the top of the enchiladas.
  4. Bake: Bake in the preheated oven for 15-20 minutes, or until the enchiladas are cooked through, the sauce is bubbly, and the cheese on top is melted and lightly golden. For extra browning on the cheese, you can broil for the last 1-2 minutes (watch carefully!).
  5. Serve & Enjoy! Remove from the oven. Let the enchiladas cool for a few minutes before serving. Enjoy your delicious Keto Chicken Enchiladas!

Tips for Success:

  • Keto Enchilada Sauce: This is crucial! Many store-bought enchilada sauces contain flour thickeners or added sugars. Look for brands that explicitly state “no added sugar” or “keto-friendly,” or make your own.
  • Tortilla Flexibility: If your low-carb tortillas are stiff, you can warm them briefly in a dry skillet or microwave for 10-15 seconds each to make them more pliable for rolling.
  • Chicken Cooking: The initial cooking of the chicken is just to get it started and infused with flavor. It will finish cooking fully in the oven, staying tender.
  • Customization: Add a small amount of diced jalapeños for more heat, or a sprinkle of fresh cilantro after baking.
  • Serving Suggestions: Serve with a side of sour cream, fresh avocado slices or guacamole, or a simple low-carb salad.
