Yields: Approximately 16-20 servings (depending on slice size) Prep time: 15 minutes Chill time: 1 hour (minimum) to overnight (recommended)

Ingredients:

  • 4 ounces (1 stick) unsalted butter, softened

  • 4 ounces coconut oil, at room temperature (solid but pliable)

  • 8 ounces cream cheese, softened

  • 6 tablespoons dark unsweetened cocoa powder
  • ⅓ cup granulated Swerve (or your preferred granular erythritol blend)
  • 1 teaspoon vanilla extract
  • Pinch of pink Himalayan salt
  • 1 cup pecans
  • 1 cup unsweetened shredded coconut (flaked or finely shredded)

Equipment:

  • Baking sheet
  • Stand mixer with a paddle attachment, or a hand mixer
  • Large mixing bowl
  • Spatula
  • 8×8 inch dish (lined with parchment paper for easy removal) or a plate lined with parchment paper

Instructions:

  1. Toast Pecans: Preheat your oven to 350°F (175°C).

    • Spread the pecans evenly onto a cookie sheet.
    • Toast in the preheated oven for 6 minutes. Watch them closely as nuts can burn quickly. They should be fragrant and lightly golden. Remove from oven and set aside.
  2. Prepare Creamy Base: In a large mixing bowl (or the bowl of a stand mixer), combine the softened butter, room temperature coconut oil, softened cream cheese, dark unsweetened cocoa powder, granulated Swerve, vanilla extract, and pink Himalayan salt.

    • Using a stand mixer fitted with a paddle attachment, or a hand mixer, whip the mixture for about 4-5 minutesuntil it is completely smooth, light, and fluffy. Scrape down the sides of the bowl as needed.
  3. Fold in Pecans & Coconut: Add the warm toasted pecans and unsweetened shredded coconut to the whipped mixture.
    • Use a spatula to gently fold them in until they are evenly distributed. (Adding the nuts while warm makes the mixture a little looser, which helps with incorporating them and allows you to sprinkle toppings easily.)
  4. Set & Garnish: Scoop the mixture into your prepared dish (lined with parchment paper for easy removal) or onto a plate lined with parchment paper, shaping it as desired.
    • For garnish, sprinkle extra toasted pecans and unsweetened coconut on top, pressing them gently into the surface.
  5. Chill to Set: Place the dish in the refrigerator to set. Overnight is best for optimal firmness and flavor development, but if you can’t wait, at least 1 hour will allow it to firm up enough to slice.
  6. Slice & Serve: Once completely set, carefully lift the “delight” out of the dish using the parchment paper. Slice into squares or bars and serve.
    • Store any leftovers in an airtight container in the refrigerator.

Tips for Success:

  • Softened Ingredients: Ensuring your butter, coconut oil, and cream cheese are truly softened is key to achieving a smooth, lump-free, and fluffy base.
  • Whip it Good: The whipping step is important for incorporating air and creating a light texture.
  • Warm Pecans: Adding them warm as suggested helps slightly loosen the mixture, making it easier to fold them in.
  • Sweetener Type: Granulated Swerve works well. You could also use Swerve Confectioners for an even smoother texture if you prefer. Adjust to your desired sweetness level.
  • Chill Time: Don’t rush the chilling process! This dessert relies on chilling to firm up properly. Rene might not wait, but patience is often rewarded with keto treats!
  • Storage: Due to the butter and cream cheese, these must be stored in the refrigerator.
