Ingredients:

4 tablespoons (½ stick) unsalted butter, softened to room temperature

⅓ cup powdered erythritol-based sweetener (e.g., Swerve Confectioners or Lakanto Monkfruit Powdered)

1 large egg white

½ teaspoon almond extract

¼ teaspoon salt

1 ½ cups super-fine almond flour

Equipment:

Medium mixing bowl

Fork, spatula, or hand mixer

Baking sheet

Parchment paper or silicone baking mat

Instructions:

 Preheat Oven & Prep Pan: Preheat your oven to 325°F (160°C).Line a baking sheet with parchment paper or a silicone baking mat.

Combine Wet Ingredients: In a medium mixing bowl, add the softened butter, powdered sweetener, egg white, almond extract, and salt.Use a fork, whisk, or hand mixer to combine these ingredients until well blended and creamy. Scrape down the sides of the bowl as needed.

Add Almond Flour: Gradually add the almond flour to the wet mixture, mixing with a fork or spatula until a soft, uniform dough forms. The dough will be thick.

Chill Dough (Optional but Recommended): For easier handling and to prevent spreading, cover the bowl and refrigerate the dough for 15-30 minutes.

Form Cookies: Use a small cookie scoop (about 1 tablespoon size) or roll the dough into small balls (roughly 1 inch in diameter).
