Ingredients:

  • 8 ounces (1 block) cream cheese, softened to room temperature (full-fat recommended)
  • 4 tablespoons (½ stick or ¼ cup) unsalted butter, softened to room temperature
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh lemon zest (from about 1-2 lemons)
  • 3 tablespoons Swerve Confectioners Sweetener (or your preferred powdered low-carb sweetener like erythritol or allulose)
  • Optional: Pinch of turmeric for natural yellow color (do not use too much, it can affect flavor)
  • Optional: Desiccated unsweetened coconut or more lemon zest for garnish

Equipment:

  • Medium mixing bowl
  • Hand mixer or stand mixer with paddle attachment
  • Rubber spatula
  • Mini cupcake liners or silicone mini muffin molds
  • Baking sheet (to hold molds for freezing)

Instructions:

  1. Soften Ingredients: Ensure your cream cheese and butter are fully softened to room temperature. This is crucial for a smooth, lump-free mixture. If they’re not, place them in a microwave-safe bowl and microwave in 15-second intervals, checking and stirring after each, until just soft (do not melt completely).
  2. Mix All Ingredients: In a medium mixing bowl, add the softened cream cheese, butter, lemon juice, lemon zest, and Swerve Confectioners Sweetener.
    • Using a hand mixer (or stand mixer with paddle attachment), beat on medium speed until all ingredients are thoroughly combined and the mixture is completely smooth and creamy. Scrape down the sides of the bowl as needed.
  3. Portion into Molds: Using a cookie scoop or a spoon, fill mini cupcake liners or silicone mini muffin molds evenly with the lemon fat bomb mixture. Smooth the tops with the back of a spoon if desired.
  4. Freeze to Harden: Place the filled molds on a baking sheet and transfer to the freezer for at least 1 hour, or until the fat bombs are firm and solid.
