Ingredients:

- 2 cups Crazy Richard’s 100% natural peanut butter (or other natural peanut butter with no added sugar or oils)
- 1 ¼ cups powdered monk fruit sweetener (or other powdered erythritol-based sweetener like Swerve Confectioners)
- 2 teaspoons pure vanilla extract
- ¾ cup lightly salted dry-roasted peanuts, divided
- 1 ½ teaspoons coarse pink Himalayan salt, divided (or more to taste)
Equipment:
- Microwave-safe bowl
- Whisk or spatula
- Mini muffin pan(s) (silicone recommended, or metal with paper liners) OR an 8×8-inch baking pan
- Small cookie scoop (optional, for mini muffin pan)
Instructions:
- Prepare Pan: If using mini muffin pans, line them with mini paper liners or ensure they are silicone. If using an 8×8-inch baking pan, line it with parchment paper, leaving an overhang on the sides to easily lift the finished candy.

- For Bars (8×8-inch Pan): Pour the entire mixture into the prepared 8×8-inch pan and spread evenly to create a uniform layer.
- Add Topping:
