Ingredients:

  • 1 package Max Mallow marshmallows, cut into quarters (ensure they are sugar-free/keto-friendly)
  • 1 package Catalina Crunch Honey Graham Cereal (or another low-carb, keto-friendly cereal)
  • 2 cups Lily’s chocolate chips (or your preferred sugar-free chocolate chips)
  • ½ cup (1 stick) unsalted butter, melted
  • ⅓ cup Swerve Confectioners Sweetener (or your preferred powdered erythritol blend)
  • 1 cup peanut butter (natural, no-sugar-added recommended)

Equipment:

  • Large saucepan or microwave-safe bowl (for melting)
  • Large mixing bowl
  • Rubber spatula or sturdy spoon
  • 8×8 inch or 9×9 inch baking pan
  • Parchment paper

Instructions:

  1. Prepare Pan: Line an 8×8 inch or 9×9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Melt Chocolate Base: In a large saucepan (or microwave-safe bowl), melt the butter over low heat. Add the Lily’s chocolate chips to the melted butter and continue to stir over low heat until the chocolate is completely melted and smooth.   3. Combine with Peanut Butter: Remove the melted chocolate mixture from the heat. Add the peanut butter and mix well with a rubber spatula until thoroughly combined and smooth.
  4. Assemble Main Mixture: Pour the chocolate-peanut butter mixture over the Catalina Crunch Honey Graham cereal in a large mixing bowl. Stir gently until the cereal is mostly coated.

  5. Press into Pan & Chill: Pour the entire mixture into the prepared parchment-lined baking pan. Use a spatula or the back of a spoon to press and smooth the mixture evenly into the pan.
    • Place the pan in the refrigerator for at least 1 hour, or until the bars are completely firm and set.
  6. Cut & Store: Remove the pan from the refrigerator. Use the parchment paper overhang to lift the entire slab out of the pan.
    • Place on a cutting board and cut into squares of your desired size.
