Ingredients:
- 1 ¼ cups Lily’s chocolate chips (or other sugar-free, keto-friendly chocolate chips)
- 2 cups Max Mallow marshmallows, cut into quarters (or other low-carb, sugar-free marshmallows)
- 2 cups Catalina Crunch Honey Graham Cereal (or other keto-friendly, honey graham flavored cereal)
- 1 tablespoon MCT oil (or coconut oil)
Equipment:
- 8×8 inch baking pan
- Parchment paper
- Microwave-safe bowl
- Spatula or spoon
Instructions:
- Prepare Pan: Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides to easily lift the bars out later.
- Melt Chocolate: In a microwave-safe bowl, combine the Lily’s chocolate chips and MCT oil.
- Microwave in 30-second increments, stirring well after each interval, until the mixture is completely melted and smooth. Be careful not to overheat the chocolate.
- Combine Marshmallows & Cereal: Add the quartered Max Mallow marshmallows to the melted chocolate mixture. Stir gently until the marshmallows are just coated.
- Immediately add the Catalina Crunch Honey Graham Cereal to the bowl. Mix well with a spatula until all the cereal is evenly coated with the chocolate-marshmallow mixture. Work quickly, as the mixture will start to set as it cools.
- Press into Pan: Pour the mixture into the prepared 8×8 inch pan. Using the back of a spatula or your hands (lightly greased with a bit of oil if sticking), press the mixture down firmly and evenly into the pan.
- Chill: Place the pan in the refrigerator for at least 1 hour, or until the bars are completely firm.
- Slice & Enjoy! Once chilled and firm, use the parchment paper overhang to lift the entire slab out of the pan. Place on a cutting board and slice into 9-16 squares (depending on your desired portion size). Serve immediately and enjoy!
