Ingredients:

  • 1 pound ground breakfast sausage (check label for no added sugar/fillers)
  • 1 packet (1 ounce) taco seasoning (check label for no added sugar/starch)
  • 1 (10-ounce) can diced tomatoes with green chilies (Rotel-style, check for no added sugar), undrained
  • 7 large eggs
  • ½ cup heavy whipping cream
  • 2 cups shredded cheddar cheese (or Mexican blend), divided
  • Salt and black pepper to taste
  • Non-stick cooking spray
  • Optional keto-friendly toppings: Sour cream, low-carb salsa, sliced avocado, fresh cilantro.
