Ingredients:

  • 5 large eggs
  • ½ cup coconut oil, melted or use liquid coconut oil
  • 2 tablespoons unsalted butter, melted
  • 1 cup pumpkin purée (not pumpkin pie filling)
  • 1 tablespoon + 1 teaspoon pumpkin pie spice
  • ½ cup Swerve Confectioners Sweetener (or your preferred powdered erythritol blend)
  • 1 ½ teaspoons vanilla extract
  • ½ cup + 2 tablespoons coconut flour
  • ½ teaspoon salt
  • 1 ½ teaspoons baking powder

For the Cream Cheese Filling:

  • 3 ounces cream cheese, softened to room temperature
  • 1 tablespoon heavy whipping cream (HWC)
  • 1 ½ tablespoons Swerve Confectioners Sweetener
  • ½ teaspoon vanilla extract

Equipment:

  • Standard 12-cup muffin tin
  • Muffin liners (highly recommended!)
  • Large mixing bowl
  • Whisk or electric mixer
  • Small bowl (for filling)
  • Toothpick

Instructions:

  1. Preheat Oven & Prep Muffin Tin: Preheat your oven to 350°F (175°C).
    • Line your muffin tin with paper or silicone muffin liners. Keto baked goods tend to stick, so liners are highly recommended.
  2. Prepare Muffin Batter: In a large bowl, whisk together the eggs, ½ cup Swerve Confectioners Sweetener, pumpkin purée, 1 ½ teaspoons vanilla extract, and 1 tablespoon + 1 teaspoon pumpkin pie spice until well combined.
    • Melt the coconut oil and butter together (if not already liquid). Add the melted coconut oil and butter to the wet ingredients and mix well.
    • In a separate small bowl, whisk together the coconut flour, salt, and baking powder.
    • Add the dry ingredients to the wet ingredients and mix thoroughly until a smooth batter forms. Set aside.
  3. Prepare Cream Cheese Filling: In a small bowl, combine the softened cream cheese, 1 tablespoon heavy whipping cream, 1 ½ tablespoons Swerve Confectioners Sweetener, and ½ teaspoon vanilla extract. Stir until all ingredients are well combined and the mixture is smooth and creamy.
  4. Assemble Muffins: Fill each muffin liner approximately two-thirds full with the pumpkin muffin batter.
     
    • Spoon approximately ½ teaspoon of the cream cheese filling mixture on top of the batter in the center of each muffin.
    • With a toothpick, gently swirl the cream cheese mixture into the batter to create a marble effect.
  5. Bake: Bake in the preheated oven for 18 to 22 minutes, or until a knife or toothpick inserted into the pumpkin muffin (avoiding the cream cheese center) comes out clean.
     
  6. Cool & Enjoy! Remove the muffins from the oven. Let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. These muffins are delicious warm or at room temperature!
